What are Cage-Free chickens & eggs?
Eggs laid by hens at indoor floor operations, sometimes called free-roaming. The hens may roam in a building, room or open area, usually in a barn or poultry house, and have unlimited access to fresh food and water. Some may also forage for food if they are allowed outdoors. Cage-free systems vary and include barn-raised and free-range hens, both of which have shelter that helps protect against predators. Both types are produced under common handling and care practices, which provide floor space, nest space and perches. Depending on the farm, these housing systems may or may not have an automated egg collection system.

What about different colored eggs?
Did you know that white-feathered chickens with white ear lobes lay white eggs and red-feathered ones with red ear lobes lay brown eggs? And besides that, there are certain chickens that even lay speckled eggs and blue eggs. But nutritionally there is no difference in the eggs, the only difference is the color of the shell.
Which part of the egg is best?
Most of the eggs’ nutrients and nearly half of the protein (just over 40%) is found in the yolk. Additionally, egg yolks also containes  fat-soluble nutrients like vitamin D, E, A, choline, and the antioxidants lutein/zeaxanthin. Plus, the mostly unsaturated fat  found in the egg yolk, helps your body absorb these essential and important components.

What makes an egg organic?
And organic egg is and egg produced through organic means. In this process, the poultry are fed organic feed. According to the United States Department of Agriculture, organic also means that the laying hens must have access to the outdoors and cannot be raised in cages.
How long do eggs stay good?
Refrigerate eggs at 40°F or less. Store them in their original carton on an inside shelf. The carton keeps the eggs from picking up odors or flavors from other foods and helps prevent moisture loss. Reference this handy chart for more egg storage tips.

One large egg has varying amounts of 13 essential vitamins and minerals and only has 70 calories. Eggs are an affordable source of high-quality protein and contain all nine essential amino acids. In addition, eggs are a good source of other important nutrients like vitamin D, phosphorus, riboflavin and selenium. Eggs are also rich in the essential amino acid leucine,  which plays a unique role in stimulating muscle protein synthesis.
